Pesto Salmon, Rice, and Asparagus

I usually try to plan out all of our possible dinner ideas on Sunday. I write them on our whiteboard in the kitchen, so I can avoid the "what's for dinner" question every night. When I first started this, I found myself writing the exact same things up there week after week. I love to try new recipes, but I never thought about getting the ingredients I needed when I would go to the store, and I also figured that it would take too long to cook new things anyways. I started doing some research online for different variations of our favorite meals, and I found out that there are all kinds of healthy, inexpensive, QUICK recipes that I could make in 30 minutes or less. So now, I try to make something new at least twice a week. They don't always turn out great, but when they do- I can add a new meal to my go-to recipe book for easy delicious dinners. We have been on a salmon kick lately, and I've tried all sorts of different methods to cook it. I found this recipe online, and it is so easy. It doesn't use that many ingredients and can be ready in 25-30 minutes. 

Pesto Salmon
3-4 Salmon fillets
3 tablespoons extra virgin olive oil
Fresh ground pepper
3/4 cup prepared pesto sauce
1/2 cup Parmesan cheese


-Heat oven to 400 degrees
-Place salmon on a rimmed baking sheet with foil (do not spray, you want the skin to stick so you can loosen it with a flat spatula at the end when serving)
-Drizzle top of salmon with EVOO
-Apply pepper to taste over salmon
-Spread pesto sauce over each fillet (I don't like to use TOO much because it overtakes the salmon)
-Sprinkle Parmesan cheese over top
-Bake 10-14 minutes, or until fish flakes easily with fork

Whatever asparagus recipe suits you best (I steam mine with just a little olive oil, water, kosher salt, and lots of pepper)

Instant white or brown rice
 




So easy and soooo good! Even Peyton liked it!
